THREE TOMATO SALAD

1/2 cup olive oil

3 Tablespoons white wine vinegar

2 teaspoons dried Italian seasoning

1 teaspoon sugar

1 teaspoon salt

1/2 teaspoon pepper

1 large yellow or red tomato, chopped

2 plum tomatoes, chopped

1 pint cherry or grape tomatoes, cut in half

Salt and pepper to taste

 

Whisk together olive oil, white wine vinegar, and next four ingredients. Place tomatoes in a 2-qt. baking dish and pour olive oil mixture over tomatoes. Cover and let stand three hours.

 

(NOTES: You can use any combination of tomatoes. Other options for the recipe include adding cooked and crumbled bacon, and/or fresh mozzarella. For serving, you can put on a bed of lettuce if you’d like.)
