MARY ANN’S CRAZY ABOUT CORN DIP 2 (8 oz.) packages cream cheese, softened 1/4 cup fresh lime juice 1/4 cup vegetable oil 1/4 cup fresh cilantro, finely chopped 1 Tablespoon ground cumin 1/2 teaspoon salt Dash black pepper 1 cup pecans, chopped 1—15 1/4 oz. can corn, drained 1 small white onion, finely chopped
Beat together cream cheese, lime juice, vegetable oil, cumin, salt and black pepper. Fold in pecans, corn and onions. Chill and serve with crackers or corn chips.
